This recipe is a great way to start your morning! It’s important to eat breakfast every day as there is much research to show the metabolism-boosting benefits of eating a good breakfast. Remember, breakfast is the most important meal of the day!
¾ cup fat-free egg substitute
1 dash red pepper flakes
1/8 cup low-fat cheddar cheese
1/8 cup green pepper (chopped)
1/8 cup onion (chopped)
2 whole mushrooms (sliced)
2 Tbsp. salsa
Directions:
Coat nonstick skillet with cooking spray, and preheat over medium heat. Sauté green pepper, onions & mushrooms. When onions are translucent, remove veggies from pan and set aside.
Add egg substitute to the skillet and sprinkle with red pepper. Cook eggs without stirring for approximately 1½ to 2 minutes. With a spatula, gently lift edges of eggs to allow the uncooked egg to flow below, and continue cooking. Add vegetables & most of the cheese onto half the omelet, fold the other half over the filling, and cook until done and the cheese is melted (approximately 1minute); then flip the omelet to crisp the other side for approximately 1 minute.
Plate your masterpiece and top with salsa & the remaining cheese. Enjoy and begin your day with a little pizzazz!
