Saturday Morning Speciality: French Toast

3 egg whites, or 1/3 cups egg substitute

3 Tbsp. skim milk

¼ tsp. ground pumpkin pie spice

1 tsp. almond extract

4 slices raisin bread

Directions:

Whisk egg whites, milk, spice & vanilla in a medium bowl. Dredge bread in mixture, covering thoroughly each side. Coat skillet or griddle with nonstick cooking spray and cook toast over medium-low heat to prevent sticking. Cook each slice of coated raisin bread for approximately 2 minutes on each side until golden brown. Serve it up hot!

If you feel especially daring and want to splurge a little, for only a few extra calories, you can drizzle ½ tablespoon of honey over each slice of toast. Now that’s breakfast with flair!

Serves 2 (2 slices each)

Nutrients per serving: 185 calories, 3g fat, 0g sat fat, 5mg cholesterol, 290mg sodium, 31g carbs, 1g fiber, 14g protein, 46mg (eggs), or 98mg (subs) calcium, 300mg potassium

Nutrients per serving (w/honey drizzle): 245 calories, 48g carbs, 311mg potassium
