Fruit Salad–Light & Tasty!

This recipe is slso great as a dessert!

1 cup       Mandarin unsweetened 8oranges, or fresh peeled oranges  (cut into chunks)

2 cups      fresh pineapples, or unsweetened canned pineapple (cut into chunks)

1 cup      red or green grapes

1 cup      strawberries (sliced)

1 cup      blueberries

2 cups     low-fat vanilla yogurt

1 cup      low-fat strawberry yogurt

1 Tbsp.    almonds (sliced) (poppy seeds may be substituted if preferred)

2 Tbsp.    coconut

 Directions:

After combining fruit in a large bowl, set aside. Then fold in almonds & yogurts with whisk. Layer a portion of fruit salad into individual serving dishes, then scoop 2 tablespoons of yogurt mixture over the fruit. For a pleasant presentation, top with fruit & nuts. A tasty, healthy fruit salad, or dessert winner!

 Serves 8 (1 cup each)

Nutrients per serving: 163 calories, 1.8g fat, 0.8g sat fat, 5.2mg cholesterol, 61mg sodium, 28.6g carbs, 1.9g fiber, 4.6g protein, 131.5mg calcium, 419.7mg potassium
