Apple-dorf Fresh & Crunchy Salad

I love salads – all kinds.  And summer is a perfect time to try something new.  This salad can be served as a side dish, a dessert, or even an afternoon snack. 

1 med.      granny smith apple (cubed)

2 med.      gala (or red delicious) apples (cubed)

¾ tsp.        lemon juice

1 cup        celery (diced)

¼ cup       walnuts (chopped)

¼ cup       raisins

¼ cup       dried cranberries

 Dressing:

¼ cup       low-fat mayonnaise

¼ cup       low-fat sour cream

¼ cup       plain nonfat yogurt

1 Tbsp.     fresh lemon juice

1½ tsp.     honey

1/8 tsp.     salt

 Directions:

Dressing should be made ahead and well chilled before serving. Whisk mayonnaise, sour cream, yogurt, lemon juice, honey & salt until well blended. Cover & refrigerate.

Chop apples, celery and nuts. Then add raisins & cranberries and toss together. Prior to serving, add dressing and gently mix together.

This salad keeps well refrigerated for two days and makes a healthy snack!

Serves 8 (approx. 2/3 cup each)
